The name Botejyu comes from the rhythmic sounds of grilling okonomiyaki: “Bote” for flipping the pancake with a spatula and “Jyu” for grilling. Founded in Osaka in 1946, Botejyu specialized in okonomiyaki. This was a post-war period marked by significant changes. At that time, rice flour (Meriken) was dissolved in water and became a substitute for rice. This method preserved nutrients and was simple to prepare, especially given the food shortages in Osaka, leading to its rapid spread. Since its establishment, thanks to its skillful cooking techniques and unique flavor, okonomiyaki has become a traditional Osaka dish. Botejyu then expanded its chain throughout Japan.
